Giacomo Mori
The chaplain of Palazzone, Francesco Mori, founded Giacomo Mori farm in the mid-Eighteenth century. Its located in the province of Siena, in southern Tuscany near the borders of Umbria and Lazio. During this time the farm was a major operation covering over 2000 acres. Wine production at the time included both Chianti and Montepulciano in addition to Vermouth, Vin Santo, Vinegar, Extra Virgin Olive Oil and the famed Chianina cattle. Today the estate is 22 acres and makes three wines and olive oil. The Mori family continues to use only the indigenous varieties of Sangiovese, Canniolo and Colorino to produce Chianti. The wines are aged in a combination of 20-hectoliter Slovenian botte and 5 hectoliter French Tonneaux. The wines have a wonderful sense of place; a true Tuscan character. The wines strike a very nice balance between tradition and modern wine making philosophies.
