The grapes for this wine come from Proprietary. pre-phylloxera (own rooted Vitis vinifera) and autochthonous, vineyards situated in Toro (Zamora) that are head-trained in goblet.The harvest in the year 2007 yielded 10 Hls/Ha. Only the cleanest and most mature bunches are chosen after an exhaustive selection process and there is an additional very rigorous selection of every grape at the winery when the bunches are destemmed by hand.

FERMENTATION: The grape must undergoes a cold pre-fermentative maceration during 5 days and is fermented during 10 days in open deposits, traditional foot press with daily pumpovers. with an extended maceration during 14 days with a gentle remontage.

MATURATION: The wine, after having malolactic fermentation in 100% new French oak Bordelaise barriques, is transferred to different 100% new French oak Bordelaise barriques where it will age for 18 months and racked every 4 months.
