Winemaking Our Alvear Fino is aged in a biological way under a clear layer that the yeast creates on top of the wine, known as the velo de flor, that prevents the wine from oxidation and gives it its characteristic aroma and flavour. Our finos don’t need to be fortified as we reach the required alcohol content through fermentation with the Pedro Ximenez must. Wines are aged in the Criaderas and solera system, traditional methods involving rows of casks of american oak under a clear layer of yeast know as the “Velo de flor.” Aged at least 5 years.
