Contratto Pas Dose Alta Langa

  • Denomination: Metodo Classico – Vino Spumante di Qualita.

  • Grape Varieties: Pinot Noir.

  • Vineyards: Alta Langa, 800m above sea level, primarily calcareous clay.

  • Harvest Time: Last week of August. All grapes are harvested by hand.

  • Vinification: Grapes are cooled down prior to crushing, only free run juice is used. Primary and Secondary fermentation uses only native yeasts. After primary fermentation, the wine matures for 9 months before bottling and secondary fermentation.

  • Aging: A minimum of 48 months on lees in bottle.

  • Riddling: By hand over 4 weeks
