Varietals: 100% Catarratto
Vineyards: Sourced from western Sicily, near the towns of Vita and Salemi, about 50 km north east of Marsala and at 300 m above sea level. The vines are planted east facing, following the vertical trellis system.
Soils: Sand and Clay
Winemaking: After de-stemming and skin maceration at a low temperature, the grapes are soft-pressed and then fermented in temperature controlled stainless-steel tanks (16°– 18° C) for 10 -12 days.
