Venica Sauvignon Ronco del Cero

  • Varietals: 100% Sauvignon Blanc

  • Vineyards: 100% estate fruit grown in the Ponca soils of the Collio in vineyards which reside on both sides of the Italian and Slovenian border. Cero is a hill on the estate that’s planted to 8 different clones of Sauvignon, which are blended before bottling to produce this wine.

  • Winemaking: After harvest and destemming, the Sauvignon is macerated for 18-20 hours and lightly pressed under CO2 that prevents oxidation. 10% of the wine is aged on its lees in 20/27 hectoliter wood vats for 6 months. The wine is then assembled and bottled at the full moons between the end of March and May.
